• 論文抄録 / 内容記述: 食物に対する感情経験の生理相関は，実用的・理論的に重要である．先行の生理心理学研究は，表情筋筋電図が食物画像を見たときの主観感情評定に対応することを報告していた．しかし研究は少なく，また摂食について調べた研究はなかった．本発表では，この問題を調べた我々の一連の研究を紹介する．研究 1 では，若年被験者を対象として，食物画像を見たときの主観経験（好き・食べたい・感情価・活性度）と生理信号（皺眉筋・大頬骨筋の筋電図等）を計測した．研究 2 では，同様の対象において，様々なフレーバとテクスチャのゲル状食品を口中に入れ保持した際の主観経験と生理信号を計測した．研究 3 では，同様の対象・刺激で，咀嚼した際の主観経験と生理信号を計測した．研究 4 では，研究 3 と同様の方法で，高齢群を対象として実験した．こうした実験の結果一貫して，好き・食べたい・感情価の評定と表情筋筋電図活動との間に対応が示された．こうした結果から，表情の生理信号で食の感情センシングが可能であることが示唆される．

• 論文抄録(英) / 内容記述: Physiological correlates of emotional experience with food stimuli are practically and theoretically important. Some previous psychophysiological studies have reported that facial electromyography (EMG) corresponds to subjective emotional ratings while looking at food images. However, the number of such studies was low, and no study examined solid food consumption. Here I review a series of our studies investigating this issue. In Study 1, we measured subjective experiences (liking, wanting, valence, and arousal) and physiological signals (e.g., EMG recorded from the corrugator supercilii) when young participants viewed food images. In Study 2, we measured subjective experiences and physiological signals when the young participants placed gelatinous foods of various flavors and textures in their mouths. In Study 3, subjective experience and physiological signals during chewing were measured with similar participants and stimuli. In Study 4, the same method as in Study 3 was tested with older participants. The results of these experiments consistently showed associations between the ratings of liking, wanting, and valence and facial EMG activity. These results suggest that physiological signals of facial expressions can be used for emotional sensing for food processing.
